The temperature of the honey is kept below that of the bee colony, and the honey is stored carefully (in a cool, dark place). R. The sweet chestnut is one of the most beautiful and distinctive trees in southern France and the Italian region of Tuscany. In this plant, the male inflorescences produce nectar—so abundantly, in fact, that the entire inflorescences appear sticky. Due to its high fructose content, the honey remains liquid for a long time; it has a robust, refined aroma and is appreciated for its slight, delicately bitter note. Sweet chestnut honeys have a high content of enzymes and inhibitors.
